Roasted Carrots Power Up Your Healthy Diet
Ingredients
- 1 pound baby carrots, scrubbed and trimmed
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 teaspoon smoked paprika
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine the olive oil, honey, smoked paprika, fresh thyme, salt, and pepper. Whisk together until well blended.
- Add the baby carrots to the bowl and toss them gently in the honey mixture until evenly coated.
- Spread the carrots out in a single layer on a baking sheet lined with parchment paper.
- Roast the carrots in the preheated oven for 25-30 minutes, or until they are tender and caramelized, turning them halfway through for even roasting.
- Remove the carrots from the oven and let them cool for a few minutes.
- Drizzle any remaining honey mixture from the bowl over the carrots before serving.
- Garnish with fresh thyme sprigs for a pop of color.

Arrange the roasted carrots on a serving platter, drizzling any remaining glaze over them. For an extra touch, sprinkle some additional smoked paprika and fresh thyme leaves on top before serving.
