Ingredients

  • 4 pieces ripe peaches, halved and pitted
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 8 ounces fresh mozzarella, sliced
  • 0.5 cup pistachios, shelled and coarsely chopped
  • 1 tablespoon olive oil
  • 0 to taste salt
  • 0 to taste pepper
  • 0 for garnish fresh basil leaves

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the peach halves, cut side up, on a baking sheet lined with parchment paper.
  3. Drizzle honey and balsamic vinegar evenly over the peaches.
  4. Roast in the preheated oven for 20 minutes, until the peaches are tender and slightly caramelized.
  5. While the peaches are roasting, heat the olive oil in a skillet over medium heat.
  6. Add the chopped pistachios to the skillet, toasting them for about 3-5 minutes, until fragrant but not burnt. Remove from heat and set aside.
  7. Once the peaches are roasted, remove them from the oven and let cool slightly.
  8. Layer slices of fresh mozzarella on each peach half.
  9. Sprinkle the toasted pistachios over the mozzarella.
  10. Season lightly with salt and pepper.
  11. Return the peaches to the oven for an additional 5 minutes to slightly warm the mozzarella.
  12. Remove from the oven and let cool briefly. Garnish with fresh basil leaves before serving.
