Roasted Peaches with Mozzarella Flavorful Delight
Ingredients
- 4 pieces ripe peaches, halved and pitted
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 8 ounces fresh mozzarella, sliced
- 0.5 cup pistachios, shelled and coarsely chopped
- 1 tablespoon olive oil
- 0 to taste salt
- 0 to taste pepper
- 0 for garnish fresh basil leaves
Instructions
- Preheat your oven to 375°F (190°C).
- Place the peach halves, cut side up, on a baking sheet lined with parchment paper.
- Drizzle honey and balsamic vinegar evenly over the peaches.
- Roast in the preheated oven for 20 minutes, until the peaches are tender and slightly caramelized.
- While the peaches are roasting, heat the olive oil in a skillet over medium heat.
- Add the chopped pistachios to the skillet, toasting them for about 3-5 minutes, until fragrant but not burnt. Remove from heat and set aside.
- Once the peaches are roasted, remove them from the oven and let cool slightly.
- Layer slices of fresh mozzarella on each peach half.
- Sprinkle the toasted pistachios over the mozzarella.
- Season lightly with salt and pepper.
- Return the peaches to the oven for an additional 5 minutes to slightly warm the mozzarella.
- Remove from the oven and let cool briefly. Garnish with fresh basil leaves before serving.
