Ingredients

  • 1 cup fresh strawberries, hulled and halved
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 cup ricotta cheese
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 4 slices rustic bread (sourdough or whole grain)
  • 2 tablespoons olive oil
  • 1 pinch sea salt
  • 0 optional fresh mint leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, combine the fresh strawberries, honey, and balsamic vinegar. Toss until the strawberries are evenly coated.
  3. Spread the strawberry mixture on a baking sheet lined with parchment paper and roast in the oven for about 15-20 minutes, or until the strawberries are caramelized and soft. Remove and let cool slightly.
  4. While the strawberries are roasting, prepare the whipped ricotta. In a mixing bowl, combine the ricotta, heavy cream, vanilla extract, and a pinch of sea salt. Use a hand mixer to whip the mixture until light and fluffy (about 2-3 minutes).
  5. Heat a skillet over medium heat. Add olive oil and toast the slices of bread until golden brown on both sides, about 2-3 minutes each side.
  6. To assemble, spread a generous layer of whipped ricotta on each toasted slice of bread. Top with the roasted strawberries (drizzle any remaining juices over the top).
  7. Garnish with fresh mint leaves if desired for an added burst of flavor and color.

💡 Chef's Notes

Serve the toast on a wooden board or decorative plate, with additional mint scattered around for brightness. Drizzle extra honey over the finished toast for a touch of elegance. Enjoy!
