Roasted Strawberry Whipped Ricotta Toast Delight
Ingredients
- 1 cup fresh strawberries, hulled and halved
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 cup ricotta cheese
- 2 tablespoons heavy cream
- 1 teaspoon vanilla extract
- 4 slices rustic bread (sourdough or whole grain)
- 2 tablespoons olive oil
- 1 pinch sea salt

Instructions
- Preheat your oven to 400°F (200°C).
- In a medium bowl, combine the fresh strawberries, honey, and balsamic vinegar. Toss until the strawberries are evenly coated.
- Spread the strawberry mixture on a baking sheet lined with parchment paper and roast in the oven for about 15-20 minutes, or until the strawberries are caramelized and soft. Remove and let cool slightly.
- While the strawberries are roasting, prepare the whipped ricotta. In a mixing bowl, combine the ricotta, heavy cream, vanilla extract, and a pinch of sea salt. Use a hand mixer to whip the mixture until light and fluffy (about 2-3 minutes).
- Heat a skillet over medium heat. Add olive oil and toast the slices of bread until golden brown on both sides, about 2-3 minutes each side.
- To assemble, spread a generous layer of whipped ricotta on each toasted slice of bread. Top with the roasted strawberries (drizzle any remaining juices over the top).
- Garnish with fresh mint leaves if desired for an added burst of flavor and color.
