Salmon, Shrimp, Cheesy Broccoli with Corn Delight
Ingredients
- 2 fillets salmon (6 oz each)
- 8 large shrimp, peeled and deveined
- 2 cups broccoli florets
- 1 cup corn kernels (fresh or frozen)
- 1 cup shredded cheddar cheese
- 0.5 cup cream cheese, softened
- 0.5 cup milk
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper
- 1 bunch fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium pot, bring salted water to a boil. Add the broccoli florets and cook for 3 minutes until bright green and tender-crisp. Drain and set aside.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the shrimp to the skillet and season with paprika, salt, and pepper. Cook for 2-3 minutes until the shrimp turn pink. Remove from heat.
- In a mixing bowl, combine the cooked broccoli, corn, cream cheese, and half of the cheddar cheese. Mix until everything is well combined.
- In a separate bowl, season the salmon fillets with salt, pepper, and a sprinkle of paprika.
- In a baking dish, spread an even layer of the cheesy broccoli and corn mixture. Place the salmon fillets on top, then spoon the sautéed shrimp over the salmon.
- Pour the milk evenly over the entire dish, then top with the remaining cheddar cheese.
- Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Garnish with chopped fresh parsley before serving.
