Sausage and Egg Breakfast Casserole Perfect for Mornings
Ingredients
- 1 pound breakfast sausage, casings removed
- 6 large eggs
- 2 cups whole milk
- 1 cup shredded cheddar cheese
- 1 cup diced potatoes (fresh or frozen)
- 0.5 cup diced bell peppers (any color)
- 0.5 cup chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- to taste salt and pepper
- 1 tablespoon olive oil
- optional hot sauce for serving
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish with cooking spray or olive oil.
- In a large skillet over medium heat, add the breakfast sausage. Cook until browned and crumbled, about 5-7 minutes. Drain the excess fat and set aside.
- In a large mixing bowl, whisk together the eggs, whole milk, garlic powder, onion powder, salt, and pepper until well combined.
- Add the cooked sausage, diced potatoes, bell peppers, and half of the shredded cheddar cheese to the egg mixture. Stir to incorporate all the ingredients evenly.
- Pour the mixture into the prepared baking dish, spreading it out evenly.
- Sprinkle the remaining cheddar cheese on top.
- Bake in the preheated oven for 30-35 minutes, or until the casserole is set in the center and lightly golden on top.
- Remove from the oven and let it cool for 5 minutes before slicing.
- Garnish with chopped green onions and serve warm. Drizzle with hot sauce if desired for a spicy kick.
