Ingredients

  • 4 large eggs
  • 4 links breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 4 large tortillas (flour or whole wheat)
  • 0.5 cup milk
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon fresh chives, chopped (for garnish)

Instructions

  1. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Heat olive oil in a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring often, until the eggs are just set but still moist. Remove from heat.
  3. In a separate bowl, combine the crumbled sausage with the cooked eggs, mixing in half the shredded cheese.
  4. Lay a tortilla flat on a clean surface. Spoon about 1/4 of the egg and sausage mixture onto the center of the tortilla, followed by a sprinkle of the remaining cheese.
  5. Carefully roll up the tortilla from the bottom, tucking in the sides as you go, to create a tight roll. Repeat with remaining tortillas.
  6. Place the roll-ups seam side down in the skillet and cook on medium heat for 2-3 minutes on each side, until the tortillas are golden brown and crisp.
  7. Remove the roll-ups from the skillet and let them cool slightly before slicing in half.

Serve warm with fresh chives and a side of salsa or avocado for dipping.
