Sausage, Egg, and Cheese Breakfast Roll-Ups Delight
Ingredients
- 4 large eggs
- 4 links breakfast sausage, cooked and crumbled
- 1 cup shredded cheddar cheese
- 4 large tortillas (flour or whole wheat)
- 0.5 cup milk
- 0.25 teaspoon black pepper
- 0.25 teaspoon salt
- 1 tablespoon olive oil
- 1 tablespoon fresh chives, chopped (for garnish)
Instructions
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Heat olive oil in a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring often, until the eggs are just set but still moist. Remove from heat.
- In a separate bowl, combine the crumbled sausage with the cooked eggs, mixing in half the shredded cheese.
- Lay a tortilla flat on a clean surface. Spoon about 1/4 of the egg and sausage mixture onto the center of the tortilla, followed by a sprinkle of the remaining cheese.
- Carefully roll up the tortilla from the bottom, tucking in the sides as you go, to create a tight roll. Repeat with remaining tortillas.
- Place the roll-ups seam side down in the skillet and cook on medium heat for 2-3 minutes on each side, until the tortillas are golden brown and crisp.
- Remove the roll-ups from the skillet and let them cool slightly before slicing in half.
