Sausage, Egg and Cheese Casserole Simple Comfort Meal
Ingredients
- 1 pound breakfast sausage (spicy or mild)
- 8 large eggs
- 2 cups whole milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers (mixed colors)
- 1 cup diced onion
- 6 slices day-old bread, cubed

- for garnish fresh parsley, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, crumble and cook the breakfast sausage until browned and fully cooked. Drain any excess grease and set aside.
- In a large mixing bowl, whisk together the eggs, whole milk, garlic powder, onion powder, salt, and pepper until well combined.
- Stir in the cooked sausage, diced bell peppers, diced onion, and three-quarters of the shredded cheddar cheese into the egg mixture.
- Grease a 9x13 inch baking dish. Evenly spread the cubed bread across the bottom of the dish.
- Pour the egg and sausage mixture over the bread, ensuring even coverage. Gently press down with a spatula to allow the bread to soak up the egg mixture.
- Sprinkle the remaining cheddar cheese over the top.
- Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the cheese is golden and bubbly.
- Let the casserole cool for about 5 minutes before slicing and serving.
- Garnish with freshly chopped parsley before serving.
