Savory Avocado Breakfast Sandwich Simple and Tasty
Ingredients
- 1 whole ripe avocado
- 2 slices whole grain bread
- 1 large egg
- 1 slice cheddar cheese
- 2 slices tomato
- handful fresh spinach
- to taste salt and pepper
- 1 tablespoon olive oil
- optional red pepper flakes
Instructions
- Prepare the Avocado: Cut the avocado in half, remove the pit, and scoop it into a bowl. Mash it with a fork until it's creamy, then season with salt and pepper to taste. Set aside.
- Toast the Bread: Place the slices of whole grain bread in a toaster or on a griddle over medium heat until golden and crispy.
- Cook the Egg: In a small skillet, heat the olive oil over medium heat. Crack the egg into the skillet and cook until the white is set but the yolk is still runny (about 2-3 minutes for sunny-side up). If you prefer a fully cooked yolk, flip and cook for another minute.
- Assemble the Sandwich: On one slice of toasted bread, spread a generous layer of the mashed avocado. Top with fresh spinach, the slice of cheddar cheese, tomato slices, and the cooked egg. Sprinkle with red pepper flakes if desired.
- Complete the Sandwich: Place the second slice of toast on top to create the sandwich. Gently press down.
- Serve: Cut the sandwich in half if desired, and enjoy immediately while the egg is still warm and gooey.
