Ingredients

  • 6 large croissants, preferably day-old
  • 200 g sliced deli ham
  • 200 g Gruyère cheese, grated
  • 100 g cream cheese, softened
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 large egg, beaten (for egg wash)
  • to taste Salt and pepper

Instructions

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix the softened cream cheese, Dijon mustard, honey, and fresh thyme (or dried thyme) together until well combined. Season with salt and pepper to taste.
  3. Slice each croissant in half horizontally, creating an outer layer and a bottom layer.
  4. Spread a generous layer of the cream cheese mixture on the bottom half of each croissant.
  5. Layer 2-3 slices of ham on top of the spread, followed by an ample amount of grated Gruyère cheese.
  6. Place the top half of the croissant over the filling, pressing down gently to secure.
  7. Place the assembled croissants on the prepared baking sheet. Brush the tops of each croissant with the beaten egg.
  8. Transfer the baking sheet to the preheated oven and bake for 15-18 minutes or until the croissants are golden brown and the cheese is melted.
  9. Remove from the oven and let cool for a few minutes before serving. You can cut them in half for easy eating or serve them whole.

💡 Chef's Notes

Serve warm on a wooden platter, garnished with fresh thyme sprigs.
