Ingredients

  • 1 lb beef flank steak, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon turmeric
  • 0.5 teaspoon cayenne pepper
  • 3 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • to taste salt and pepper
  • 4 pieces pita bread or naan
  • 1 cup lettuce, shredded
  • 1 medium tomato, sliced
  • 0.5 medium cucumber, thinly sliced
  • 0.5 cup pickled turnips (optional)
  • 0.5 cup tahini sauce (store-bought or homemade)
  • to taste fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, combine the olive oil, cumin, coriander, smoked paprika, turmeric, cayenne pepper, minced garlic, lemon juice, salt, and pepper. Mix well to form a marinade.
  2. Add the sliced beef to the marinade, ensuring each piece is well-coated. Cover and let it marinate in the refrigerator for at least 1 hour, preferably overnight for maximum flavor.
  3. Preheat a grill or a skillet over medium-high heat.
  4. Once hot, add the marinated beef slices in a single layer, cooking for about 3-4 minutes on each side, or until they are cooked through and have a nice char. Remove from heat and let it rest for a few minutes.
  5. While the beef is resting, prepare your pita or naan by lightly heating it on a dry skillet or grill until warm.
  6. To assemble the sandwich, lay the warm bread flat and spread a generous amount of tahini sauce in the center.
  7. Layer on the lettuce, sliced tomatoes, cucumber, and pickled turnips. Top with the grilled beef slices.
  8. Drizzle a little more tahini sauce over the beef and sprinkle with chopped parsley.
  9. Fold the pita or naan around the fillings, pressing gently to secure everything inside.
