Ingredients

  • 1.5 lbs beef sirloin tips, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cups beef broth
  • 0.25 cup all-purpose flour
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the beef tips and season with salt and pepper. Sear the beef until browned on all sides, about 5-7 minutes. Remove the beef and set aside.
  2. In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, stirring constantly.
  3. Sprinkle the flour over the onions and garlic, stirring well to incorporate. Cook for about 1-2 minutes to create a roux.
  4. Gradually whisk in the beef broth, stirring continuously until the mixture thickens and is smooth.
  5. Reduce the heat to medium-low, then add the heavy cream, Worcestershire sauce, thyme, and rosemary. Stir to combine and allow to simmer for 5 minutes.
  6. Return the seared beef tips to the skillet. Cover and let simmer for 10-15 minutes, allowing the flavors to meld and the beef to tenderize further. Stir occasionally.
  7. Taste and adjust seasoning with salt and pepper as needed.

Serve the beef tips over a bed of creamy mashed potatoes or egg noodles, garnished with freshly chopped parsley.
