Ingredients

  • 1 pound boneless, skinless chicken breasts, diced
  • 2 cups frozen tater tots
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season it with salt, pepper, Italian seasoning, and garlic powder. Cook for about 6-8 minutes or until the chicken is cooked through and no longer pink. Remove from heat and set aside.
  3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer. Whisk in the Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper as needed.
  5. In a greased 9x13 inch casserole dish, spread the cooked chicken evenly across the bottom.
  6. Pour the creamy Alfredo sauce over the chicken, ensuring it’s evenly covered.
  7. Carefully arrange the frozen tater tots on top of the chicken and sauce, creating an even layer.
  8. Sprinkle shredded mozzarella cheese over the tater tots.
  9. Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and the cheese is bubbling.
  10. Once done, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
