Ingredients

  • 1 cup cooked shrimp, peeled and deveined
  • 1 cup cooked scallops, roughly chopped
  • 1 cup calamari rings, cooked and sliced
  • 1 cup mixed greens (arugula, spinach, and baby kale)
  • 0.5 cup cherry tomatoes, halved
  • 0.5 cup cucumber, diced
  • 0.25 cup red onion, thinly sliced
  • 0.25 cup black olives, sliced
  • 2 tablespoons capers, rinsed
  • 1 each avocado, diced
  • 1 each lemon, juiced
  • 3 tablespoons olive oil
  • 0 to taste salt
  • 0 to taste pepper
  • 0 for garnish fresh dill

Instructions

  1. In a large mixing bowl, combine the cooked shrimp, scallops, and calamari. Gently toss to mix the seafood together.
  2. Add the mixed greens, cherry tomatoes, cucumber, red onion, black olives, and capers to the bowl.
  3. Drizzle the olive oil and lemon juice over the salad. Season with salt and pepper to taste.
  4. Carefully toss the ingredients together to ensure everything is coated evenly without breaking the seafood.
  5. Gently fold in the diced avocado last to avoid mashing.
  6. Let the salad sit for 5 minutes to allow the flavors to meld together.
  7. Serve immediately, garnished with fresh dill on top.

💡 Chef's Notes

Serve in individual bowls or on a large platter. Garnish with extra lemon wedges and a sprinkle of dill for a pop of color.
