Ingredients
- 2 cups cooked jasmine rice
- 1 pound shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 3 pieces green onions, chopped
- 2 cloves garlic, minced
- 1 small bell pepper, diced

Instructions
- Start with ensuring your rice is cold and clumped together if using leftover rice. If using fresh rice, spread it out on a baking sheet to cool and dry out slightly.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp, seasoning with a pinch of salt and pepper, and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil. Once hot, toss in the white parts of the green onions, garlic, and bell pepper. Stir-fry for about 2 minutes until the vegetables are tender.
- Incorporate the frozen peas and carrots into the skillet. Stir and cook for an additional 2-3 minutes until heated through.
- Push the vegetable mixture to one side of the skillet. Pour the beaten eggs into the other side and scramble them until fully cooked.
- Add the cooked rice to the skillet, followed by the cooked shrimp. Pour in the soy sauce and oyster sauce (if using). Toss everything together, ensuring the rice is coated evenly with the sauces. Cook for an additional 3-5 minutes, allowing the rice to slightly crisp at the bottom if desired.
- Drizzle sesame oil over the fried rice and add the green parts of the chopped green onions. Stir well to combine all the ingredients. Taste and adjust seasoning with salt and pepper as needed.
- Remove from heat and let it sit for a moment. Serve the shrimp fried rice in bowls or on plates, garnished with fresh cilantro if desired.
