Ingredients

  • 12 oz ziti pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • to taste salt and pepper
  • for garnish fresh basil, chopped

Instructions

  1. In a large pot, bring salted water to a boil and cook the ziti pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook for 3-4 minutes, stirring occasionally until they turn pink and opaque. Season with salt and pepper to taste.
  4. Stir in the halved cherry tomatoes and cook for another 2 minutes until the tomatoes begin to soften.
  5. Reduce the heat to low, then pour in the heavy cream and stir to combine. Allow the mixture to simmer gently for about 3-4 minutes until it thickens slightly.
  6. Add the grated Parmesan cheese and stir until melted and creamy. Then, stir in the fresh spinach and cooked ziti, mixing everything well to coat the pasta.
  7. Taste and adjust seasoning if necessary, then remove from heat.
