Ingredients

  • 2 pounds baby potatoes, washed and halved
  • 1 packet Lipton Onion Soup Mix
  • 1 cup chicken or vegetable broth
  • 1 4 cloves garlic, minced
  • 1 4 cup olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine the baby potatoes with the olive oil, minced garlic, thyme, and black pepper. Mix well until the potatoes are evenly coated.
  2. In the slow cooker, pour in the chicken or vegetable broth and sprinkle the Lipton Onion Soup Mix over the top. Stir to combine.
  3. Add the seasoned potatoes into the slow cooker, ensuring they are submerged in the broth as much as possible.
  4. Cover the slow cooker with the lid and set it on low heat. Cook for 6-7 hours, or on high for 3-4 hours until the potatoes are fork-tender.
  5. Once cooked, give the potatoes a gentle stir to coat them in the flavorful broth.
  6. Transfer the potatoes to a serving dish, and sprinkle with fresh parsley for garnish before serving.
