Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 4 ounces Swiss cheese, sliced
  • 1 cup fresh spinach, roughly chopped
  • 0.5 cup cream cheese, softened
  • 0.25 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0 to taste salt and pepper
  • 1 tablespoon olive oil
  • 1 cup breadcrumbs
  • 0 optional fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine cream cheese, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until smooth and well combined.
  3. Place each chicken breast between two layers of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to about half an inch thick for even cooking.
  4. Season both sides of each chicken breast with salt and pepper.
  5. Spread a generous amount of the cream cheese mixture onto one side of each chicken breast. Top with chopped spinach and a slice of Swiss cheese.
  6. Roll each chicken breast tightly, starting from the filled side. Secure the roll with toothpicks or kitchen twine.
  7. In a shallow bowl, pour the breadcrumbs. Roll each chicken roll into the breadcrumbs, pressing gently to adhere.
  8. Heat olive oil in a large oven-safe skillet over medium heat. Add the chicken rolls and cook for about 3-4 minutes on each side, or until golden brown.
  9. Once browned, transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  10. Remove the chicken from the oven and let it rest for a few minutes before slicing. Garnish with fresh parsley if desired.
