Ingredients

  • 1.5 pounds ground beef
  • 1 cup diced ribeye steak
  • 1 cup bell peppers (red and green), finely chopped
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1.5 cups fresh breadcrumbs
  • 2 large eggs, beaten
  • 0.5 cup shredded provolone cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon hot sauce (optional)
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
  2. In a skillet over medium heat, sauté the diced ribeye steak, bell peppers, onion, and garlic until the steak is cooked and the vegetables are tender (about 5-7 minutes). Season with salt and pepper. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine the ground beef, cooked ribeye mixture, breadcrumbs, beaten eggs, provolone cheese, ketchup, Worcestershire sauce, and hot sauce, if using. Mix until just combined, being careful not to overmix.
  4. Shape the mixture into a loaf and place it in the prepared loaf pan. Spread mozzarella cheese evenly over the top of the meatloaf.
  5. Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 160°F (70°C) and the cheese on top is melted and bubbly.
  6. Once cooked, remove from the oven and let the meatloaf rest for about 10 minutes before slicing.
  7. Garnish with fresh parsley and serve with your favorite sides.

💡 Chef's Notes

Serve slices of the meatloaf on a plate drizzled with extra ketchup or a cheese sauce. Accompany with roasted potatoes and a side salad for a complete meal.
