Ingredients

  • 4 fillets salmon fillets (about 6 oz each)
  • 0.25 cup pure maple syrup
  • 2 tablespoons soy sauce (low sodium)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 each red bell pepper, sliced
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a small bowl, whisk together the maple syrup, soy sauce, Dijon mustard, olive oil, garlic powder, ginger powder, salt, and pepper until well combined.
  3. Place the salmon fillets on one side of the prepared baking sheet. Brush a generous amount of the maple glaze over the salmon.
  4. In a separate bowl, toss the broccoli, cherry tomatoes, and red bell pepper with the remaining maple glaze until they’re well coated.
  5. Spread the vegetables on the other side of the baking sheet in an even layer.
  6. Place the baking sheet in the oven and bake for 15-20 minutes, or until the salmon is cooked through (internal temperature of 145°F) and the vegetables are tender.
  7. Remove from the oven and let it rest for a few minutes.
  8. Garnish with freshly chopped parsley before serving.

💡 Chef's Notes

Serve the salmon and veggies on a large platter, drizzling any leftover glaze from the baking sheet over the top for an extra touch of flavor.
