Ingredients

  • 12 oz linguine or spaghetti
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 links Italian sausage
  • 28 oz crushed tomatoes
  • 1 teaspoon sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes
  • 1 cup fresh basil leaves, chopped
  • to taste salt and pepper
  • for serving grated Parmesan cheese

Instructions

  1. In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.
  2. In a large skillet over medium heat, heat the olive oil. Once hot, add the diced onion and sauté for about 3-5 minutes until translucent. Add minced garlic and sauté for an additional minute until fragrant.
  3. Add the Italian sausage to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 6-8 minutes.
  4. Pour in the crushed tomatoes, add sugar, dried oregano, and red pepper flakes if using. Stir to combine and let the sauce simmer for about 10 minutes, allowing the flavors to meld.
  5. Add the cooked pasta to the sauce, tossing everything together until well coated. If the mixture seems too thick, gradually add reserved pasta water until the desired consistency is reached.
  6. Stir in the chopped fresh basil, season with salt and pepper to taste, and allow to cook for another 1-2 minutes for the basil to wilt slightly.
  7. Remove from heat and scoop the pasta into serving bowls. Top with grated Parmesan cheese and additional fresh basil if desired.

💡 Chef's Notes

Adjust the spice level by choosing mild or spicy sausage and adding red pepper flakes.
