Ingredients

  • 1.5 cups whole wheat flour
  • 0.75 cups coconut sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup unsweetened applesauce
  • 0.5 cups Greek yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups fresh strawberries, hulled and sliced
  • 2 tablespoons chia seeds (optional)
  • to taste powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch round cake pan with cooking spray or line it with parchment paper.
  2. In a large mixing bowl, whisk together the whole wheat flour, coconut sugar, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl, mix the unsweetened applesauce, Greek yogurt, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  5. Gently fold in the sliced strawberries and chia seeds if using, ensuring they are evenly distributed throughout the batter.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Once cooled, dust the top with powdered sugar if desired. Slice and serve!
