Skinny Strawberry Cake Simple and Tasty Delight
Ingredients
- 1.5 cups whole wheat flour
- 0.75 cups coconut sugar
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 0.25 teaspoon salt
- 1 cup unsweetened applesauce
- 0.5 cups Greek yogurt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1.5 cups fresh strawberries, hulled and sliced
- 2 tablespoons chia seeds (optional)

Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9-inch round cake pan with cooking spray or line it with parchment paper.
- In a large mixing bowl, whisk together the whole wheat flour, coconut sugar, baking powder, baking soda, and salt until well combined.
- In a separate bowl, mix the unsweetened applesauce, Greek yogurt, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
- Gently fold in the sliced strawberries and chia seeds if using, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Once cooled, dust the top with powdered sugar if desired. Slice and serve!
