Ingredients

  • 1 lb ground beef or plant-based substitute
  • 0.5 cup onion, finely chopped
  • 0.5 cup bell pepper, finely chopped
  • 0.5 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt and pepper
  • 4 slices sourdough or thick-cut bread
  • 1 cup cheddar cheese, shredded
  • 1 tablespoon butter

Instructions

  1. In a large skillet over medium heat, add the ground beef or plant-based substitute. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Add the finely chopped onion and bell pepper to the skillet. Sauté until the veggies are softened, approximately 3-4 minutes.
  3. Stir in the ketchup, Worcestershire sauce, brown sugar, garlic powder, paprika, salt, and pepper. Mix well and let it simmer for about 10 minutes until thickened.
  4. Meanwhile, heat a separate nonstick skillet over medium heat. Spread butter on one side of each slice of bread.
  5. Place two slices of bread butter-side down in the skillet, and layer half of the shredded cheddar cheese on each.
  6. Spoon the sloppy joe mixture generously over the melted cheese, then top with the remaining cheddar cheese.
  7. Place the other slices of bread on top, butter-side up. Cook for 3-5 minutes or until golden brown, then carefully flip the sandwiches and cook the other side until golden and the cheese is melted.
  8. Remove from the skillet, let cool for a minute, and slice in half to reveal the gooey cheesy goodness.

💡 Chef's Notes

Serve with a side of pickles and potato chips for the classic feel. You can also garnish with fresh parsley for a pop of color!
