Ingredients

  • 4 cups frozen corn
  • 1 package cream cheese, softened
  • 0.5 cup sour cream
  • 0.5 cup shredded sharp cheddar cheese
  • 0.5 cup diced jalapeños
  • 0.25 cup diced green onions
  • 1 tablespoon garlic powder
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • 0.5 cup crispy bacon bits (optional for garnish)

Instructions

  1. In a large slow cooker, combine the frozen corn, softened cream cheese, sour cream, and shredded cheddar cheese.
  2. Add the diced jalapeños, green onions, garlic powder, smoked paprika, and a pinch of salt and pepper.
  3. Stir the ingredients together until well combined.
  4. Cover the slow cooker and set it on low heat. Cook for about 4 hours, or until the corn is tender and the cheeses are melted, stirring occasionally.
  5. Once cooked, taste and adjust the seasoning if needed. If you prefer a creamier texture, you can stir in more sour cream or cream cheese to your liking.
  6. Serve hot, garnished with crispy bacon bits and additional sliced green onions if desired.
