Slow Cooker Texas Style Chili Flavorful and Easy Meal
Ingredients
- 2 lbs ground beef (or 1 lb ground beef and 1 lb ground pork)
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 red bell peppers diced
- 1 green bell pepper diced
- 2 cans (15 oz each) kidney beans, rinsed and drained
- 1 can (28 oz) diced tomatoes (with juice)
- 2 tablespoons tomato paste
- 2 tablespoons chili powder
- 1 tablespoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon cayenne pepper (adjust to taste)
- 1 cup beef broth
- 1 tablespoon olive oil
Instructions
- In a large skillet over medium-high heat, add olive oil. Once hot, add the diced onions, garlic, and bell peppers. Sauté for about 5 minutes until they begin to soften.
- Add the ground beef (or pork/beef mix) to the skillet. Cook until browned and no longer pink, breaking it apart with a wooden spoon (about 7-10 minutes). Drain any excess fat.
- Transfer the cooked mixture to the slow cooker. Add kidney beans, diced tomatoes (with juice), and tomato paste.
- Sprinkle in the chili powder, smoked paprika, cumin, oregano, salt, black pepper, and cayenne pepper. Pour in the beef broth and stir until everything is well combined.
- Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours. Stir occasionally if possible.
- Once ready, check seasoning and adjust with more salt or cayenne pepper if desired.
- Serve hot with your choice of toppings like shredded cheese, sour cream, chopped green onions, or cilantro.
