Smoked Sausage and Potatoes Flavorful One-Pan Meal
Ingredients
- 1 pound smoked sausage, sliced
- 4 medium red potatoes, diced
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 bell pepper diced (any color)
- 1 teaspoon smoked paprika
- 0.5 teaspoon dried thyme
- 0.25 teaspoon cayenne pepper (optional)
- 3 tablespoons olive oil

- for garnish fresh parsley, chopped
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the sliced smoked sausage to the skillet and cook for 5-7 minutes until browned and slightly crispy. Remove the sausage and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Stir in the diced potatoes and cook for 10 minutes, stirring occasionally, until they start to soften and turn golden.
- Add the diced onion and bell pepper to the skillet with the potatoes. Sauté for another 5 minutes until the vegetables are tender and the onion is translucent.
- Stir in the minced garlic, smoked paprika, dried thyme, and cayenne pepper (if using). Cook for 1 minute until fragrant.
- Return the cooked sausage to the skillet and mix everything together. Season with salt and black pepper to taste. Cook for an additional 3-5 minutes, allowing all the flavors to meld together and the sausage to heat through.
- Remove from heat and garnish with fresh parsley before serving.
💡 Chef's Notes
Serve the skillet directly in the pan for a rustic touch, or divide it onto plates. Add a sprig of parsley on top for garnish and serve with a side of crusty bread for a complete meal.
