Ingredients

  • 4 ears fresh corn, husked
  • 1 tablespoon smoked paprika
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 lime zest and juice of
  • to taste fresh cilantro leaves, chopped (for garnish)

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together the smoked paprika, chili powder, garlic powder, salt, and black pepper.
  3. Brush each ear of corn with olive oil and then generously sprinkle the spice mix over all sides of the corn.
  4. Wrap the corn in aluminum foil, making sure they are tightly sealed.
  5. Place the foil-wrapped corn on the grill. Cook for about 15-20 minutes, turning occasionally until the corn is tender and cooked through.
  6. Carefully remove the corn from the grill and let it sit for a few minutes before unwrapping.
  7. Once unwrapped, drizzle the juice of the lime over the corn and sprinkle the lime zest for an extra burst of flavor.
  8. Garnish with fresh cilantro leaves before serving.

For extra flavor, try adding cheese or hot sauce before serving.
