Ingredients

  • 1 cup semi-sweet chocolate chips
  • 0.5 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup mini marshmallows
  • 0.5 cup graham cracker crumbs
  • to taste extra chocolate chips for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease with non-stick spray.
  2. In a microwave-safe bowl, combine the semi-sweet chocolate chips and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  3. Remove the bowl from the microwave and let it cool slightly. Stir in the granulated sugar until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
  5. In another bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients into the chocolate mixture, stirring until just combined.
  6. Fold in the graham cracker crumbs and mini marshmallows until evenly distributed in the batter.
  7. Spoon the batter into the prepared mini muffin tins until each is about ¾ full. Top each brownie bite with a few extra chocolate chips.
  8. Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (but no wet batter).
  9. Remove from the oven and allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
