S’mores Brownie Bites Tasty Treat for Everyone
Ingredients
- 1 cup semi-sweet chocolate chips
- 0.5 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 0.25 cup unsweetened cocoa powder
- 0.5 teaspoon baking powder
- 0.25 teaspoon salt
- 0.5 cup mini marshmallows
- 0.5 cup graham cracker crumbs
- to taste extra chocolate chips for topping
Instructions
- Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease with non-stick spray.
- In a microwave-safe bowl, combine the semi-sweet chocolate chips and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Remove the bowl from the microwave and let it cool slightly. Stir in the granulated sugar until well combined.
- Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
- In another bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients into the chocolate mixture, stirring until just combined.
- Fold in the graham cracker crumbs and mini marshmallows until evenly distributed in the batter.
- Spoon the batter into the prepared mini muffin tins until each is about ¾ full. Top each brownie bite with a few extra chocolate chips.
- Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (but no wet batter).
- Remove from the oven and allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
