Ingredients

  • 2 cups all-purpose flour
  • 1 cup packed brown sugar
  • 0.5 cups granulated sugar
  • 0.5 cups unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups peeled and diced apples
  • 1 tablespoon lemon juice
  • 0.5 teaspoon ground nutmeg
  • 0.25 cups granulated sugar for topping
  • 1 tablespoon cinnamon for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  6. Reserve about 1/2 cup of the dough for topping, and evenly spread the remaining dough in the prepared baking pan, pressing it down firmly.
  7. In another bowl, combine the diced apples with lemon juice, nutmeg, and a sprinkle of cinnamon. Mix well, then spread the apple mixture over the dough in the pan.
  8. Crumble the reserved dough over the apple mixture, ensuring it covers most of the apples for a lovely crusty topping.
  9. In a small bowl, mix the remaining granulated sugar with cinnamon and sprinkle it generously over the top of the bars.
  10. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  11. Allow to cool in the pan on a wire rack for at least 20 minutes before slicing into bars.
