Ingredients

  • 2.75 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1.5 cups white sugar
  • 1 egg egg
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract
  • 0.75 teaspoon salt
  • 0.25 teaspoon cream of tartar
  • 0.25 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter with the white sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg, vanilla extract, and almond extract until fully combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just incorporated; do not overmix.
  6. Chill the dough in the refrigerator for about 30 minutes to make it easier to handle.
  7. Once chilled, scoop tablespoon-sized portions of dough and roll them into balls. Dip each ball into the granulated sugar to coat.
  8. Place the sugar-coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Gently flatten each cookie with the bottom of a glass or your hand to about 1/2 inch thick.
  10. Bake in the preheated oven for 8-10 minutes, or until the edges are slightly golden but the centers look soft and under-baked.
  11. Allow the cookies to cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
