Ingredients

  • 8 oz spaghetti
  • 1 lb shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon dried basil
  • 1 teaspoon paprika

Instructions

  1. In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing for about 2-3 minutes until fragrant.
  3. Stir in the halved cherry tomatoes and cook for about 5 minutes, allowing them to soften and release their juices.
  4. Add the shrimp to the skillet, seasoning with paprika, salt, and pepper. Cook for about 3-4 minutes or until the shrimp turn pink and opaque.
  5. Pour in the heavy cream and stir to combine. Allow the mixture to simmer for 2-3 minutes until slightly thickened. Then, add the dried basil and adjust seasoning as needed.
  6. Add the cooked spaghetti to the skillet with the creamy tomato sauce, tossing gently to ensure the pasta is well coated. If the sauce is too thick, add a splash of the reserved pasta water until the desired consistency is reached.
  7. Divide the spaghetti and shrimp among plates, garnishing with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired.
