Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste none salt
  • for garnish none fresh parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a clean kitchen towel, gently pat the chickpeas dry to remove excess moisture.
  3. In a large mixing bowl, combine the chickpeas with olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, and salt. Mix well until the chickpeas are evenly coated in the spices.
  4. Spread the seasoned chickpeas in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until they are golden brown and crispy.
  6. Once done, remove from the oven and let cool slightly.
  7. Serve warm, garnished with fresh parsley if desired.
