Spicy Chicken Jalapeño Bites Recipe
Ingredients
- 1 pound ground chicken
- 6 pieces fresh jalapeños, halved and seeded
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 0.5 cup breadcrumbs (panko preferred)
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon cumin

Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground chicken, cream cheese, shredded cheddar cheese, minced garlic, smoked paprika, onion powder, cumin, salt, and pepper. Mix well until all ingredients are fully incorporated.
- Take each jalapeño half and fill it generously with the chicken mixture, ensuring it is heaped above the rim.
- Roll each filled jalapeño in breadcrumbs until fully coated, adding an extra layer for extra crunch.
- Place the filled and coated jalapeño halves on the prepared baking sheet. Drizzle olive oil lightly over them.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown.
- Remove from the oven and let cool slightly before serving.
