Ingredients

  • 1 pound ground chicken
  • 6 pieces fresh jalapeños, halved and seeded
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 0.5 cup breadcrumbs (panko preferred)
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • to taste salt and pepper
  • for drizzling olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, cream cheese, shredded cheddar cheese, minced garlic, smoked paprika, onion powder, cumin, salt, and pepper. Mix well until all ingredients are fully incorporated.
  3. Take each jalapeño half and fill it generously with the chicken mixture, ensuring it is heaped above the rim.
  4. Roll each filled jalapeño in breadcrumbs until fully coated, adding an extra layer for extra crunch.
  5. Place the filled and coated jalapeño halves on the prepared baking sheet. Drizzle olive oil lightly over them.
  6. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown.
  7. Remove from the oven and let cool slightly before serving.
