Ingredients

  • 2 medium zucchinis, cut into thick strips
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper (adjust for spice preference)
  • 1 large egg
  • to taste salt and pepper

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Mix well to combine.
  3. Beat the egg in a separate dish.
  4. Dip each zucchini strip first into the beaten egg, allowing any excess to drip off, then coat it in the breadcrumb mixture, pressing gently to ensure the coating adheres well.
  5. Place the coated zucchini fries onto the prepared baking sheet in a single layer. Lightly spray them with olive oil spray to encourage crisping.
  6. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy, flipping halfway through for even cooking.
  7. Remove from the oven and let them cool slightly before serving.

💡 Chef's Notes

Arrange the zucchini fries in a cone or a small basket lined with parchment paper. Serve with a side of ranch or spicy aioli for dipping.
