Ingredients
- 2 medium zucchinis, cut into thick strips
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 0.5 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 0.5 teaspoon onion powder
- 0.5 teaspoon smoked paprika
- 0.5 teaspoon cayenne pepper (adjust for spice preference)
- 1 large egg
- to taste salt and pepper
- as needed Olive oil spray
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Mix well to combine.
- Beat the egg in a separate dish.
- Dip each zucchini strip first into the beaten egg, allowing any excess to drip off, then coat it in the breadcrumb mixture, pressing gently to ensure the coating adheres well.
- Place the coated zucchini fries onto the prepared baking sheet in a single layer. Lightly spray them with olive oil spray to encourage crisping.
- Bake in the preheated oven for 20-25 minutes or until golden brown and crispy, flipping halfway through for even cooking.
- Remove from the oven and let them cool slightly before serving.
💡 Chef's Notes
