Ingredients

  • 1.5 lbs pork tenderloin
  • 3 tablespoons harissa paste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 unit Juice of 1 lemon
  • 1 unit Fresh cilantro or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine harissa paste, olive oil, minced garlic, honey, smoked paprika, cumin, salt, and black pepper to create a marinade.
  3. Place the pork tenderloin in a large resealable plastic bag or baking dish, then pour the marinade over it. Ensure the pork is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, ideally 1-2 hours for deeper flavor.
  4. Remove the pork from the marinade and place it on a lined baking tray. Drizzle with lemon juice.
  5. Roast in the preheated oven for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
  6. Once done, let the pork rest for 5-10 minutes before slicing. This helps retain the juices.
  7. Serve slices of the tenderloin drizzled with any remaining pan juices, garnished with fresh cilantro or parsley.

Slice the roasted pork tenderloin on a diagonal and arrange it on a serving platter. Scatter fresh herbs and lemon wedges around for an eye-catching presentation.
