Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 lemon zest
  • 2 lemons juice
  • 2 tablespoons fresh parsley, chopped
  • to taste salt and pepper
  • lemon wedges for garnish

Instructions

  1. In a mixing bowl, combine the shrimp with olive oil, minced garlic, red pepper flakes, lemon zest, salt, and pepper. Toss well to ensure all the shrimp are coated in the marinade. Allow to marinate for at least 15 minutes (or up to 1 hour in the fridge for more flavor).
  2. In a large skillet, heat over medium-high heat until hot.
  3. Add the marinated shrimp to the skillet in a single layer. Cook for about 2-3 minutes on one side until they turn pink. Flip the shrimp and pour in the lemon juice.
  4. Continue to cook for another 2 minutes until the shrimp is fully cooked (opaque throughout). Be careful not to overcook!
  5. Remove from heat and sprinkle fresh parsley on top. Serve immediately with lemon wedges on the side.

💡 Chef's Notes

For a beautiful serving, plate the shrimp over a bed of cooked rice or pasta and drizzle any remaining sauce from the skillet over top. Garnish with extra parsley and lemon wedges for a fresh touch!
