Instructions

  1. Begin by preparing the dressing. In a medium bowl, combine the peanut butter, soy sauce, honey or maple syrup, rice vinegar, sesame oil, and sriracha. Whisk until smooth. If the dressing is too thick, add warm water one tablespoon at a time until you reach the desired consistency.
  2. In a large mixing bowl, combine the spiralized zucchini noodles, shredded carrots, sliced red bell pepper, and red cabbage.
  3. Pour the spicy peanut dressing over the vegetables and toss gently to combine, ensuring everything is well coated.
  4. Add the chopped cilantro and green onions, tossing again to distribute evenly.
  5. Let the salad sit for about 10 minutes to allow the flavors to meld and the zoodles to soften slightly.
  6. Give the salad one last toss before serving.
