Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 lb chicken breast, diced
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1 cup Greek yogurt
  • 1 cup shredded mozzarella cheese
  • 1 2 grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon red pepper flakes (optional)
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • for garnish fresh parsley, chopped

Instructions

  1. In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken, seasoning it with salt, pepper, garlic powder, and onion powder. Cook until the chicken is golden brown and no longer pink, about 5-7 minutes.
  3. Stir in the minced garlic and chopped spinach. Cook for another 2-3 minutes, stirring until the spinach is wilted and the garlic is fragrant.
  4. Lower the heat and add the softened cream cheese and Greek yogurt to the skillet. Stir until smooth and well combined. Add the red pepper flakes for an extra kick if desired.
  5. Gradually fold in the shredded mozzarella and Parmesan cheese, stirring until the cheeses melt and create a creamy sauce.
  6. Add the cooked pasta to the skillet and gently toss until the pasta is fully coated with the spinach dip sauce. Adjust seasoning with salt and pepper to taste.
  7. Divide the Spinach Dip Chicken Pasta into serving bowls and garnish with chopped fresh parsley.

💡 Chef's Notes

Serve hot, garnished with extra shredded mozzarella and a sprinkle of red pepper flakes for color. Consider placing the pasta in a hollowed-out bread bowl for a fun twist!
