Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 0.5 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 piece lemon, zest
  • to taste none fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, mix the chopped spinach, feta cheese, cream cheese, minced garlic, oregano, lemon zest, salt, and pepper until well combined to create the stuffing.
  3. Using a sharp knife, carefully cut a pocket into each chicken breast, making sure not to cut all the way through.
  4. Stuff each chicken breast with the spinach and feta mixture, using toothpicks to secure the openings if necessary.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear for 3-4 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven to bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven and allow to rest for 5 minutes before serving.
  8. Garnish with freshly chopped parsley and serve warm.
