Spinach Stuffed Chicken Roll-Ups Tasty and Easy Meal
Ingredients
- 4 pieces boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 0.5 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.5 cup marinara sauce
- 0.25 cup fresh basil, chopped
- for cooking Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the chopped spinach, ricotta cheese, grated Parmesan, garlic powder, onion powder, salt, and pepper. Mix well until combined.
- Place a chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness, about 1/4 inch thick. Repeat with the remaining chicken breasts.
- Take a portion of the spinach filling (about 2-3 tablespoons) and place it at one end of each chicken breast. Carefully roll the chicken up tightly, starting from the filled end. Secure the roll with toothpicks if necessary.
- In an oven-safe skillet, heat a drizzle of olive oil over medium-high heat. Add the chicken roll-ups and sear for 3-4 minutes on each side until golden brown.
- Pour the marinara sauce over the seared chicken roll-ups, covering them partially. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
- Remove from the oven and let the chicken rest for a few minutes. Remove toothpicks if used, and slice the roll-ups. Garnish with fresh basil before serving.
