Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup marinara sauce
  • 0.25 cup fresh basil, chopped
  • for cooking Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the chopped spinach, ricotta cheese, grated Parmesan, garlic powder, onion powder, salt, and pepper. Mix well until combined.
  3. Place a chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness, about 1/4 inch thick. Repeat with the remaining chicken breasts.
  4. Take a portion of the spinach filling (about 2-3 tablespoons) and place it at one end of each chicken breast. Carefully roll the chicken up tightly, starting from the filled end. Secure the roll with toothpicks if necessary.
  5. In an oven-safe skillet, heat a drizzle of olive oil over medium-high heat. Add the chicken roll-ups and sear for 3-4 minutes on each side until golden brown.
  6. Pour the marinara sauce over the seared chicken roll-ups, covering them partially. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
  7. Remove from the oven and let the chicken rest for a few minutes. Remove toothpicks if used, and slice the roll-ups. Garnish with fresh basil before serving.

💡 Chef's Notes

Serve with extra marinara sauce and a sprinkle of Parmesan for added flavor.
