Ingredients

  • 1 cup fresh strawberries, hulled and sliced
  • 8 oz cream cheese, softened
  • 1 2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 2 cup crushed graham crackers
  • 1 4 cup mini chocolate chips (optional)
  • 1 cup whipped cream or Cool Whip
  • 1 pinch of salt
  • 1 tablespoon lemon juice
  • a handful of whole strawberries for garnish

Instructions

  1. In a medium-sized bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and a pinch of salt. Mix until smooth and creamy using a hand mixer or whisk.
  2. Gently fold in the whipped cream until fully integrated, creating a light and airy cheesecake filling.
  3. Add the sliced fresh strawberries and lemon juice to the cheesecake mixture, folding carefully so the strawberries stay largely intact.
  4. Set aside half of the crushed graham crackers for serving. Take a spoonful of the cheesecake mixture and form it into small balls, about 1-inch in diameter.
  5. Roll each cheesecake ball in the remaining crushed graham crackers to give them a crunchy exterior. Place each ball on a parchment-lined baking sheet once coated.
  6. Optionally, sprinkle mini chocolate chips over some of the bites for added flavor and texture.
  7. Chill the bites in the refrigerator for at least 1 hour before serving to firm up.
  8. To serve, place the bites on a beautiful serving platter, garnishing with whole strawberries around for decoration, and sprinkle a little extra crushed graham cracker on top for visual appeal.
