Ingredients

  • 1 cup fresh strawberries, hulled and diced
  • 1 2 cream cheese, softened
  • 1 4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 2 teaspoon lemon juice
  • 8 pieces eggroll wrappers
  • 1 2 cup crushed graham crackers
  • 1 egg beaten (for sealing)
  • as needed oil for frying
  • as desired powdered sugar for dusting (optional)

Instructions

  1. In a mixing bowl, combine the diced strawberries, softened cream cheese, sugar, vanilla extract, and lemon juice. Mix until smooth and creamy to create the cheesecake filling.
  2. Lay an eggroll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the cheesecake filling in the center of the wrapper.
  3. Fold the bottom corner over the filling, then fold the sides in towards the center and roll it up tightly, sealing the edge with a little beaten egg.
  4. Repeat the process with the remaining wrappers and filling until all are made.
  5. Heat oil in a deep frying pan over medium heat (about 350°F or 175°C). Carefully fry the eggrolls in batches until golden brown and crispy, about 2-3 minutes on each side. Drain on paper towels.
  6. Once slightly cooled, sprinkle the eggrolls with crushed graham crackers for extra texture.
  7. Serve warm, dusted with powdered sugar if desired.
