Strawberry Cheesecake Eggrolls Sweet and Tasty Treat
Ingredients
- 1 cup fresh strawberries, hulled and diced
- 1 2 cream cheese, softened
- 1 4 cup sugar
- 1 teaspoon vanilla extract
- 1 2 teaspoon lemon juice
- 8 pieces eggroll wrappers
- 1 2 cup crushed graham crackers
- 1 egg beaten (for sealing)
- as needed oil for frying
- as desired powdered sugar for dusting (optional)
Instructions
- In a mixing bowl, combine the diced strawberries, softened cream cheese, sugar, vanilla extract, and lemon juice. Mix until smooth and creamy to create the cheesecake filling.
- Lay an eggroll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the cheesecake filling in the center of the wrapper.
- Fold the bottom corner over the filling, then fold the sides in towards the center and roll it up tightly, sealing the edge with a little beaten egg.
- Repeat the process with the remaining wrappers and filling until all are made.
- Heat oil in a deep frying pan over medium heat (about 350°F or 175°C). Carefully fry the eggrolls in batches until golden brown and crispy, about 2-3 minutes on each side. Drain on paper towels.
- Once slightly cooled, sprinkle the eggrolls with crushed graham crackers for extra texture.
- Serve warm, dusted with powdered sugar if desired.
