Ingredients

  • 2 cups all-purpose flour
  • 1 packet instant yeast (2 1/4 teaspoons)
  • 1 4 cup granulated sugar
  • 1 2 teaspoon salt
  • 1 2 cup milk, warmed (about 110°F)
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 2 cup cream cheese, softened
  • 1 4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • 2 tablespoons lemon zest
  • 2 tablespoons butter, melted (for brushing)
  • 1 4 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)

Instructions

  1. In a large mixing bowl, combine the flour, instant yeast, granulated sugar, and salt. Mix well to incorporate all dry ingredients.
  2. In a separate bowl, whisk together the warm milk, melted butter, and egg. Pour the wet ingredients into the dry ingredients and mix until a dough starts to form.
  3. Knead the dough on a lightly floured surface for about 5-7 minutes, until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour, or until it doubles in size.
  4. While the dough is rising, prepare the cheesecake filling. In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  5. Once the dough has risen, punch it down and roll it out on a lightly floured surface into a rectangle (about 12x18 inches).
  6. Spread the cream cheese mixture evenly over the rolled-out dough, leaving a small border around the edges. Sprinkle the diced strawberries and lemon zest over the cream cheese layer.
  7. Roll the dough tightly, starting from one long side, to form a log. Pinch the seams to seal it well. Cut the log into 12 equal pieces.
  8. Place the cut rolls into a greased baking dish, spacing them evenly. Cover the dish with a damp cloth and let them rise for another 30 minutes.
  9. Preheat the oven to 350°F (175°C). After the rolls have risen, brush the tops with melted butter.
  10. Bake in the preheated oven for 25-30 minutes, until golden brown. Allow to cool for about 10 minutes after removing from the oven.
  11. For the glaze, mix the remaining powdered sugar with 1 tablespoon of milk until smooth. Drizzle the glaze over the rolls before serving.
