Strawberry Doughnut Shortcake Fresh and Easy Recipe
Ingredients
- 4 pieces glazed doughnuts, sliced in half
- 2 cups fresh strawberries, hulled and sliced
- 1 quarter cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 0 pieces Fresh mint leaves for garnish (optional)
Instructions
- In a medium bowl, combine the sliced strawberries and granulated sugar. Toss to coat and set aside for about 15 minutes to macerate.
- While the strawberries are macerating, prepare the whipped cream. In a mixing bowl, add the heavy whipping cream and powdered sugar. Beat with an electric mixer on high speed until soft peaks form, about 3-4 minutes. Mix in the vanilla extract.
- Once the strawberries have rested, slice the glazed doughnuts in half horizontally.
- To assemble, take the bottom half of one doughnut and place a generous spoonful of the macerated strawberries on top. Add a dollop of the whipped cream over the strawberries. Place the top half of the doughnut on to complete the shortcake.
- Repeat this assembly process with the remaining doughnuts.
- Serve immediately while the doughnuts are still fresh, and garnish with additional strawberries and fresh mint leaves, if desired.
