Ingredients

  • 4 pieces glazed doughnuts, sliced in half
  • 2 cups fresh strawberries, hulled and sliced
  • 1 quarter cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 0 pieces Fresh mint leaves for garnish (optional)

Instructions

  1. In a medium bowl, combine the sliced strawberries and granulated sugar. Toss to coat and set aside for about 15 minutes to macerate.
  2. While the strawberries are macerating, prepare the whipped cream. In a mixing bowl, add the heavy whipping cream and powdered sugar. Beat with an electric mixer on high speed until soft peaks form, about 3-4 minutes. Mix in the vanilla extract.
  3. Once the strawberries have rested, slice the glazed doughnuts in half horizontally.
  4. To assemble, take the bottom half of one doughnut and place a generous spoonful of the macerated strawberries on top. Add a dollop of the whipped cream over the strawberries. Place the top half of the doughnut on to complete the shortcake.
  5. Repeat this assembly process with the remaining doughnuts.
  6. Serve immediately while the doughnuts are still fresh, and garnish with additional strawberries and fresh mint leaves, if desired.
