Strawberry Lemon Blondies Easy and Flavorful Recipe
Ingredients
- 1 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1 2 granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 2 salt
- 1 zest of lemon
- 1 4 cup fresh lemon juice
- 1 cup fresh strawberries, diced
- 1 4 cup powdered sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Mix until well combined and smooth.
- Add the eggs, one at a time, mixing thoroughly after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, salt, lemon zest, and lemon juice. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in the diced strawberries, being careful not to overmix.
- Spread the batter evenly into the prepared baking dish.
- Bake in the preheated oven for about 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
- Once done, remove from the oven and let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Once cooled, dust the blondies with powdered sugar for an elegant finish and cut them into squares.
