Ingredients

  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1 2 granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 2 salt
  • 1 zest of lemon
  • 1 4 cup fresh lemon juice
  • 1 cup fresh strawberries, diced
  • 1 4 cup powdered sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Mix until well combined and smooth.
  3. Add the eggs, one at a time, mixing thoroughly after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, salt, lemon zest, and lemon juice. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Gently fold in the diced strawberries, being careful not to overmix.
  6. Spread the batter evenly into the prepared baking dish.
  7. Bake in the preheated oven for about 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  8. Once done, remove from the oven and let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  9. Once cooled, dust the blondies with powdered sugar for an elegant finish and cut them into squares.
