Strawberry Lemonade Popsicles Refreshing Summer Treat
Ingredients
- 2 cups fresh strawberries, hulled and sliced
- 1 cup freshly squeezed lemon juice (about 4-6 lemons)
- 0.5 cup honey or maple syrup (adjust to sweet preference)
- 1 cup water
- 1 zest of 1 lemon
- 1 pinch of salt
Instructions
- In a blender, combine the sliced strawberries and water. Blend until smooth.
- Strain the strawberry puree through a fine mesh sieve into a mixing bowl to remove seeds, if desired.
- Add the freshly squeezed lemon juice, honey or maple syrup, lemon zest, and a pinch of salt to the strawberry puree. Stir well until fully combined.
- Taste the mixture and adjust sweetness if needed by adding more honey or syrup.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion as they freeze.
- Insert popsicle sticks into the molds and freeze for at least 4-6 hours.
- To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds until they release easily.
