Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup freshly squeezed lemon juice (about 4-6 lemons)
  • 0.5 cup honey or maple syrup (adjust to sweet preference)
  • 1 cup water
  • 1 zest of 1 lemon
  • 1 pinch of salt

Instructions

  1. In a blender, combine the sliced strawberries and water. Blend until smooth.
  2. Strain the strawberry puree through a fine mesh sieve into a mixing bowl to remove seeds, if desired.
  3. Add the freshly squeezed lemon juice, honey or maple syrup, lemon zest, and a pinch of salt to the strawberry puree. Stir well until fully combined.
  4. Taste the mixture and adjust sweetness if needed by adding more honey or syrup.
  5. Pour the mixture into popsicle molds, leaving a little space at the top for expansion as they freeze.
  6. Insert popsicle sticks into the molds and freeze for at least 4-6 hours.
  7. To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds until they release easily.
