Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 4 cups fresh spinach, chopped
  • 1 cup strawberries, hulled and sliced
  • 0.5 cup crumbled feta cheese
  • 0.25 cup walnuts, roughly chopped
  • 0.25 cup red onion, thinly sliced
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • to taste salt and pepper

Instructions

  1. In a medium-sized pot, combine the rinsed quinoa and water or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid has been absorbed. Remove from heat and let it cool.
  2. In a large mixing bowl, combine the chopped spinach, sliced strawberries, crumbled feta cheese, walnuts, and red onion.
  3. In a small bowl, whisk together the balsamic vinegar, olive oil, honey or maple syrup, and a pinch of salt and pepper to create the dressing.
  4. Once the quinoa has cooled, fluff it with a fork and add it to the bowl with the salad ingredients.
  5. Drizzle the dressing over the salad and gently toss everything together until well combined.
  6. Adjust seasoning with additional salt and pepper if needed.
  7. Serve immediately or refrigerate for about 30 minutes to allow flavors to meld.
