Ingredients

  • 3 cups watermelon, cubed and seeds removed
  • 2 cups strawberries, hulled and sliced
  • 0.5 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. In a blender, combine the cubed watermelon, sliced strawberries, sugar, lemon juice, vanilla extract, and a pinch of salt.
  2. Blend on high until you achieve a smooth puree, ensuring there are no lumps of fruit remaining.
  3. Taste the mixture and adjust the sweetness if necessary by adding more sugar.
  4. Pour the puree into a shallow dish and cover it tightly with plastic wrap.
  5. Freeze the mixture for about 2 hours, then remove it from the freezer and stir it vigorously with a fork to break up any ice crystals.
  6. Return the dish to the freezer and continue to freeze for an additional 2-3 hours or until the sorbet is firm and scoopable.
  7. Before serving, let the sorbet sit at room temperature for 5-10 minutes for easier scooping.
  8. Serve the sorbet in chilled bowls or cones, and garnish with fresh mint leaves or sliced fruits if desired.
