Ingredients

  • 2 fillets salmon (6 oz each)
  • 1 cup fresh spinach, chopped
  • 1 2 cream cheese, softened
  • 1 4 feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dill weed
  • to taste salt and pepper
  • 1 tablespoon olive oil
  • as needed fresh lemon slices, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, mix together cream cheese, feta cheese, chopped spinach, minced garlic, lemon juice, dill weed, salt, and pepper until combined.
  3. Place the salmon fillets on a cutting board, skin-side down. Use a sharp knife to make a pocket in each fillet by slicing horizontally, being careful not to cut all the way through.
  4. Carefully stuff each salmon fillet with the cheese and spinach mixture, packing it in gently.
  5. Heat olive oil in an oven-safe skillet over medium heat. Carefully place the stuffed salmon fillets in the skillet, cooking for about 3-4 minutes on one side until golden brown.
  6. Flip the salmon fillets over and transfer the skillet to the preheated oven. Bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
  7. Remove from the oven and let rest for a few minutes before serving.
  8. Garnish with fresh lemon slices on top and serve warm.

💡 Chef's Notes

Arrange the stuffed salmon on a plate with a side of sautéed vegetables or a fresh garden salad. Drizzle a little extra olive oil over the dish and add a sprig of dill for an extra touch of elegance.
