Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper any color, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1 avocado sliced
  • 1 cup spinach or mixed greens
  • 0.25 cup feta cheese, crumbled (optional)
  • 0.25 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • to taste fresh herbs (such as basil or parsley) for garnish

Instructions

  1. In a medium pot, bring the vegetable broth or water to a boil. Add in the rinsed quinoa, reduce heat to low, cover, and simmer for 15-20 minutes until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes, then fluff with a fork.
  2. While the quinoa cooks, prepare the dressing by whisking together the tahini, lemon juice, olive oil, salt, and pepper in a small bowl. If the mixture is too thick, add a little water until you reach your desired consistency.
  3. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, corn, and spinach. Toss everything together to combine.
  4. Divide the quinoa mixture into serving bowls. Top each bowl with sliced avocado, crumbled feta cheese (if using), and drizzle the tahini dressing over the top.
  5. Garnish with fresh herbs and enjoy immediately!

Serve the power bowls in colorful bowls, layering the ingredients for an attractive display. Finish with a sprinkle of fresh herbs on top for added color.
