Ingredients

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 0.5 cup red bell pepper, finely diced
  • 0.5 cup carrots, grated
  • 2 pieces green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 0.25 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 head butter lettuce, leaves separated
  • to taste sesame seeds for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the ground chicken and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the diced bell pepper and grated carrots to the skillet, sautéing for another 3-4 minutes until the vegetables are slightly softened.
  5. In a small bowl, combine the sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Pour this sauce over the chicken mixture and toss to coat evenly.
  6. Cook for another 2-3 minutes for the flavors to meld together, then remove from heat.
  7. To serve, spoon the chicken mixture into the center of butter lettuce leaves.
  8. Garnish with sliced green onions and sesame seeds before folding the lettuce wraps up.
