Sweet Chili Chicken Lettuce Wraps Tasty and Healthy
Ingredients
- 1 pound ground chicken
- 1 tablespoon olive oil
- 0.5 cup red bell pepper, finely diced
- 0.5 cup carrots, grated
- 2 pieces green onions, sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 0.25 cup sweet chili sauce
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 head butter lettuce, leaves separated

Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the ground chicken and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the diced bell pepper and grated carrots to the skillet, sautéing for another 3-4 minutes until the vegetables are slightly softened.
- In a small bowl, combine the sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Pour this sauce over the chicken mixture and toss to coat evenly.
- Cook for another 2-3 minutes for the flavors to meld together, then remove from heat.
- To serve, spoon the chicken mixture into the center of butter lettuce leaves.
- Garnish with sliced green onions and sesame seeds before folding the lettuce wraps up.
